A dark horse coffee origin

Fifteen years ago, the Mexican coffee industry had spent decades stuck in a rut. 

For too long, Mexico had attempted to produce volume at lower prices with less focus on quality.

Chasing volume proved to be a terrible strategy.

Realistically, Mexico could never compete with the monster volumes of Brazil and larger yields from Colombia and Honduras.

Things needed to change, and Mexican coffee farmers did precisely that. They finally realized that playing at the bottom and being regarded as "just a blender" was unhealthy for their industry.

Low prices are being paid and relegated as a coffee of last resort.

Mexico's coffee industry implemented essential strategies that would lead to a much-needed improvement in quality.

First of these was the greater adoption of Organic farming, and in this regard, Mexico, along with Peru, has dramatically increased their certified Organic coffee production ratio.

With improved qualities and certified Organic lots, the first critical steps to raise Mexico's profile and reputation for better quality were starting to gain traction.

Mexican farmers also started grading their raw coffees more thoroughly. This simple-sounding process yields incredible improvements.

Today, better quality lots are separated and marketed through the proper channels to achieve higher prices and improve the sustainability of coffee farmers and their supporting communities.

Over the decade, Mexican coffees have risen in reputation to be a fair competitor with Costa Rica and Guatemala as beautiful examples of coffee perfection.

Mexican farmers have also experimented with different processing methods, such as semi-washed and naturally processed coffees.

You should try a Mexican single-origin coffee.

Most of the Mexican lots we purchase are Organic. 

But we don't (and can't) guarantee that every pack of Mexican coffee will be Organic (because we would need to keep updating the website regularly). 

Therefore, we don't label our Mexican coffee as certified Organic, nor will we make any claims about the benefits of Organic Mexican coffee.

Rest assured that proud farmers carefully grow and harvest our Mexican coffee.

We purchase between 3 and 5 different Mexican lots per year. 

Each lot ranges in score from 83 to 86 points and exceeds the specialty coffee grading standards.

Mexican coffees are perfect for milk-based espresso - latte, cappuccino and flat white.

Espresso brew recipes assume professional or commercial equipment (machine in grinder) are used.

For domestic (consumer) grade, please ensure you adjust the suggested values accordingly.

Dose - 21 grams

Tips - Mexican coffees are washed and exhibit similar characteristics to many Central American coffees. Yes, they are harder or denser so please be mindful of the grind settings to avoid choking.
Start with a medium espresso grind (e.g. midway for espresso) and then adjust your dose to suit the desired flavour outcome.

How we roast your coffees

light, medium or dark

Each coffee in our store has a unique roast profile carefully engineered and continuously updated to achieve the best balance of flavor, body, complexity, acidity, sweetness and finish.

It's a never-ending process with new lots arriving almost weekly along with the constantly changing Melbourne weather conditions.

We don't use light, medium or dark as our guide. That's so outdated and quite frankly inaccurate with around 20 shades each of light, medium and dark.

The external or outside color is never a true indicator of a coffee's cup attributes (or performance).

In other words, coffee can appear dark outside but have under-developed internals (sour, flat, weak, thin, etc.) if it was roasted poorly.

Similarly, a light exterior can easily mask or hide internal scorching or invalid roasting profile.

The target for all of our coffees (excluding specific filter roast products that are intentionally roasted lighter) is medium.

Think cafe style and coffee that is best suitable for espresso or traditional brewing devices.

What's critically important to us is that we extract maximum goodness for you to enjoy.

After 20 years and hundreds of thousands of batches, we think our Tier 1 infrastructure, skills and experience surpass the market.

Ground coffee

Ground coffee will lose around 80% of essential vitality after 15 minutes oxygen exposure. Even ground coffee inside of a sealed, unopened bag will stale considerably within 2 weeks.

Some brewing applications, such as espresso, require roasted coffee in peak freshness to produce a delicious extraction. Other brew methods are less sensitive to the impact of staling coffee.

To ensure freshness, we never hold, store or manufacture any ground coffees. All our coffees are packed as whole beans within 1hr of roasting to lock in freshness.

When a customer orders ground coffee, we take fresh roasted beans, cut the seal, grind, clean and re-seal within 60 seconds. All at the moment your order is packed for dispatch.

We recommend for the best coffee experience to consider purchasing whole beans and grind only enough to brew just moments beforehand.
